In Roman times their arenas were sandy stages for gladiatorial battles

and serves as an excellent complement to a summer evening or as a refreshing aperitif

Fermentation occurs with indigenous yeasts and ageing is on lees in 600L wooden barrels (demi-muids) for around six months

this was split between tank and a seasoned 2000L foudre for wild ferment

and it now makes up 40% of the blend
