Tiny, concentrated yields are one part of the reason, while a pre ferment cold soak, natural ferment and mature wood levage have all played their role in making recent vintages extra delicious and authentic. As per the entire Callejo range, the Flores fruit is hand harvested from organically tended old bush vines (of 40+ years) rooted in the
